The Food Innovation degree integrates chemistry, microbiology, nutrition and engineering principles with practical product development and commercial skills. Early study builds a firm scientific foundation through modules in food chemistry, food microbiology, human nutrition and statistics. Intermediate and advanced topics include food safety and HACCP, processing technologies, packaging and shelf-life, sensory science and consumer testing, food formulation and ingredient functionality, and regulatory and labelling frameworks.
Practical, hands-on learning is central: laboratory classes in food analysis and microbiology, pilot-scale processing in a food innovation facility, sensory panels and product development workshops. The programme typically culminates in an industry-linked project or research capstone where students develop and test a new product or solve a production problem. Elective options and cross-disciplinary papers allow students to study entrepreneurship, supply-chain management, sustainability and business skills relevant to commercialising food innovations.
Applicants should hold an approved secondary-school qualification or equivalent. Successful applicants normally have achieved university entrance with strong passes in science subjects; chemistry and/or biology and mathematics are recommended as prerequisites. Applicants without formal science backgrounds may be considered where they demonstrate sufficient readiness through bridging papers or prior relevant study.
