A continuing-education certificate pathway that combines online lessons with hands‑on cooking modules to teach evidence‑based nutrition and healthy culinary techniques for foodservice settings. Best suited to experienced foodservice or culinary professionals, graduates of accredited culinary/nutrition programs, certified dietary managers, educators, or USDA extension agents who want to integrate health‑focused cooking into menus and patient/client care.
Health meets Food: Culinary Medicine for Foodservice Professionals is a tiered continuing-education pathway offered in partnership with The American College of Culinary Medicine. The program uses a hybrid mix of online education and practical cooking sessions to help foodservice professionals bring science‑based healthy options to diverse menus. The pathway includes two sequential courses (HCT140 Tier III and HCT141 Tier II) that prepare learners to sit for the Certified Culinary Medicine Professional (CCMP) exam (Tier I).
The curriculum combines nutritional science with applied culinary techniques so participants can develop menu items optimized for health. Courses are delivered as blended instruction with hands‑on cooking modules and online content. The two identified courses are:
Completing the sequence readies students to prepare for and take the CCMP certification exam; exam fees are included in program costs.
There are no formal educational prerequisites for HCT140, but the course is designed for foodservice professionals with at least three years of experience or equivalent culinary or nutrition credentials. HCT141 requires successful completion of HCT140.
Culinary medicine graduates apply nutrition knowledge to menu development, food preparation and client or patient care across multiple settings. Typical work environments include healthcare facilities and hospital foodservice, restaurants, catering, school nutrition programs, community education, and other foodservice operations where health‑focused cooking is in demand. Holding the CCMP or tiered certificates can position candidates for roles in higher‑paying sectors such as healthcare foodservice and specialty dining.
Tuition varies by course (approximately $600–$750 per course) and a one‑time annual registration fee of $15 applies at first registration. Residency surcharges may apply ($5 per course for non‑Frederick County Maryland students; $10 per course for non‑Maryland students). The HCTI program offers a $500 scholarship open to all applicants without need documentation. Additional CEWD financial resources include CEWD scholarships, workforce development funding, program‑specific aid, and payment plan options.
